I interviewed Des earlier this year about his favourite dish (Hawkes Bay Natural Lamb, with glazed aubergine, white miso, soya bean & puffed farro just so you know) and found him to be witty and amazingly focused on bringing exciting and innovative food to the tables of his diners. It's a shame that Clooney's had a rough ride over the past few months (especially from Metro and the now infamous A.A. Gill meal), because Harris is a rock-steady hand and I'm excited about going back to see what's new. The venison's the famous one but I'm eyeing up the pork...
